Sfoglini uses organic golden semolina flour ground from the center of durum wheat, traditional in Italian dried pasta for centuries. Hard wheats give dried pasta its ability to hold shape as well as its ever-important “al dente” texture. Durum wheat is an ancient variety; we get ours from the Great Plains of North Dakota.
A fresh purée of porcini mushrooms are added to our signature organic semolina for a subtle earthy flavor that makes a unique pairing to any dish.
